About the Amazonas Region
The Amazonas region sits in the remote northern highlands of Peru, where the Andes begin their descent toward the Amazon basin. At elevations between 1,600 and 2,000 masl, smallholder farmers tend coffee plots amid cloud forest and montane vegetation, where cloud cover, rainfall, and rich volcanic soils create ideal growing conditions.
The region is known for clean, bright coffees with good complexity. Most production comes from small family farms organized into cooperatives, where organic certification is a natural extension of traditional farming practices that predate chemical inputs. USDA Organic certification reflects how this coffee has always been grown.
Swiss Water Decaffeination Process
The Swiss Water Process removes caffeine using water alone — no chemical solvents involved. Green coffee beans are soaked in a solution called Green Coffee Extract, which is saturated with the soluble compounds found in coffee but contains no caffeine. Because the extract is already carrying those flavor compounds, only caffeine migrates out of the beans, leaving the flavor profile largely intact.
The process continues until 99.9% of caffeine is removed, at which point the extract is filtered through activated charcoal. The result is a decaf that retains the character of the original coffee far better than solvent-based methods. Swiss Water is certified organic and non-GMO verified.
