About the Reserva Pacavita
Located in the western highlands of Honduras, the Pacavita growing area sits between two protected biological reserves — Reserva Biologica de Opalaca and Reserva Biologica Volcan Pacavita. At 1,400 to 1,700 masl, the combination of rich clay soil, distinct rainy and dry seasons, and warm sun preserves the integrity of the beans from cherry to bag.
Two producers contributed to this lot. Silvestre Vasquez farms the upper slopes of Pico Congolon, continuously pushing his operation to higher altitudes in pursuit of better quality. Joel Lopez runs Los Lesquines, a fourth-generation farm his family has cultivated since 1865. The farm spans 67 hectares and grows Bourbon, Caturra, and Catuai varieties.
About SHG EP
Honduras grades coffee by altitude. Strictly High Grown (SHG) means the coffee was grown at 1,350 masl (4,430 feet) or above. Higher altitude means slower cherry development, denser beans, and more concentrated flavor. European Process (EP) is a quality designation earned through meticulous hand-sorting, signifying no more than four defects per 1,000 beans. Both designations together indicate a coffee held to an exacting standard at every stage.
