About the Cerrado
Cerrado lies in the southwest of Minas Gerais, one of Brazil’s most established and consistent coffee-growing regions. The land is relatively flat, with well-defined wet and dry seasons and abundant sunlight — conditions that allow farmers to practice mechanical harvesting at a scale unavailable to producers on steep hillside farms elsewhere in the world.
Beyond coffee, the Cerrado is a vast tropical and subtropical biome covering more than 20% of Brazil — the largest savannah in South America and one of the most biodiverse ecoregions on earth, home to roughly 5% of all species on the planet.
About Natural Processing
In most origins, coffee cherries are harvested and dried on raised beds. In Cerrado, producers take a different approach, drying cherries directly on the tree, concentrating sugars and flavors over an extended period with minimal fermentation. The result is an intensely sweet, full-bodied cup that reflects the character of the fruit itself rather than the processing environment.

Brazil was the first country to standardize a formal green coffee grading system. Screen size 17/18 refers to beans that pass through a sifter with holes measuring 17/64 to 18/64 of an inch, conforming to a consistent size that contributes to even roasting and a uniform cup. Larger bean size is one of several quality indicators used in the Brazilian grading system.

Brazil accounts for over 33% of the world’s coffee supply and supports more than 8 million jobs in the coffee sector. The tradition goes back to 1727 when Arabica seeds first arrived in the country. Within a century Brazil had become the world’s largest producer, a position it has held ever since.
